Pairing Advice

Contrast is the key to pairing wines to foods

Many may ask what to pair with that wine.  The answer is mostly contrast.  A dry red will pair well with a sweet chocolate.  A sweet white with a blue cheese.  Generally fish and chicken pair with dry whites.  A semisweet Port will go well with a slice of muenster cheese.  Try a heavy dry cabernet with a light wedge of brie cheese.  While there are no hard and fast rules around pairing, contrast often creates the most profound influence on the wine experience.  Whatever you are eating it will always be better with wine.  Cheers!
