New Chef at Raffa's Grill

Chef Thomas was born in Vietnam. He came to the US to escape Communism.  An engineer by training, Chef Thomas has 22 years of culinary experience from his original training at Le Cordon Bleu.

Chef Thomas specializes in using French cooking techniques with Asian Spices.

There is a new Chef at Raffa’s, and it’s a great time to go back.  

 

 

Chef Thomas has a French Grandfather and a Cantonese Grandmother born in Vietnam and moved to the US.  His father’s side of the family is Vietnamese.  His family traveled to the US to flee the communist take over of the country.  Originally an Engineer, Chef Thomas studied at Le Cordon Bleu Academy for his culinary degree.

Chef Thomas loves the adventure of cooking.  He looks to Chef Masaharu Morimoto has his cooking influence. ,

Specializing in Pho

Chef Thomas is known for his Pho, a Vietnamese soup.  He has a unique approach of altering the spices and enhancing the quality of beef cuts for the dish.

This week Chef Thomas is going to be preparing Octopus and Tuna Ribbons as his specials beginning on Wednesday.

Try the Octopus this weekend at Raffa’s starting Wednesday.

Pair the Octopus with Far Niente Chardonnay.
